For the last couple of years Thomas and I have eaten a predominately plant based diet. We’ve also added things back in and out of our diets like dairy, eggs and fish. Ultimately, we’ve found that we feel best when we stick to a plant based diet with fish every other day. I went back to my doctor this past week as we’ve been working together over the past year and half to figure out what’s causing some health issues for me that I’ve struggled with for years. It’s been an incredibly frustrating process because with each new ‘fix’ I begin with a super positive and optimistic mindset, but once nothing changes, I begin to feel as if I’ll just have to deal with these issues for the rest of my life. While I know that I’m allergic or intolerant to a handful of different foods, my doctor has encouraged me to do a 4 week intensive elimination diet. Since the list of things I can have is almost as long as the list of things I can’t have, it’s going to make eating out quite difficult. So our plan is make a lot more meals at home. In the past, we’ve eaten out way more times a week than I would like to admit and when we did cook at home, we’d make our same 5 go-to recipes. Now that we plan on having most of our meals at home, sticking to the same 5 recipes would get tiring quickly. Now that I find myself pouring through food blogs looking for recipes, I thought it would be helpful to share what those sites are. I’d love to know where you find your recipes and more specifically, which ones you’d recommend!
Minimalist Baker– Thomas’s personal favorite. Their food photography is incredible and everything looks so delicious. Plus, when Thomas went to Portland he made as many stops on their Portland Food Guide as humanly possible. Up next on our list from their site is this.
Food52– Their Simple Vegan Pesto is one of our favorite recipes. We use it on everything from Tofu Scrambles to Pasta. It’s a bit hit or miss since the recipes are submitted by hundreds of contributors, so you really have to dig for the best recipes.
Deliciously Ella– I discovered Ella on Instagram a couple of years ago and have been following her blog and recipes since. It’s almost impossible to not immediately look up a recipe when you see her delicious food shots on insta. I find myself scrolling through her site often for breakfast ideas (like this creamy coconut porridge or these banana pancakes).
Oh She Glows– We’ve used Angela’s site many times over the past couple of years for healthy cooking inspiration. A few favorites- these crispy quinoa cakes, this spiced lentil soup and this feel-good lunch bowl.
