Along with wearing Gal Meets Glam Collection and living a healthy lifestyle, another passion many of our team members share is cooking and baking. We frequently trade recipes, and love arriving to work to find a delicious new treat to try, made by one of our talented employees the night before. We’ve even had an unofficial office bake-off! We know many of our readers love being in the kitchen as well, so each month, we’ll be sharing a few of the tried-and-approved recipes our team members have made recently. Double Tomato Pesto Spaghetti with Zucchini Noodles (made by Lisa): Cookie + Kate is one of my go-to food blogs (I also love her cookbook!) because she includes a list of modifications to make dishes vegan, dairy-free, nut-free, etc. with practically every recipe. Lemon, cherry tomatoes, and zucchini noodles give this pasta a fresh, summery taste and I appreciated how quickly it all came together. My whole family loved it…though my two-year-old was unfortunately not fooled for a minute by the “green spaghettis!”
Almond Butterscotch Cookies (made by Annika): Our team is all over the place in terms of dietary restrictions–some are gluten-free, some are vegan, etc. I’ve followed Heather Christo for a while and have loved so many of her clean recipes. When I saw these cookies, which include butterscotch (one of my favorite flavors), I was instantly intrigued. I brought these into work and they were a huge hit, thanks to the perfect amount of softness and flavorful spice!
Rosemary Chicken, Caramelized Corn, and Peach Salad (made by Margaret): I made this Half Baked Harvest salad with my roommates for a Sunday evening dinner. I love seasonal recipes–this one includes fresh peaches and tomatoes from the farmer’s market and basil from the basil plant we keep in the kitchen. We kept the recipe extra simple and substituted olive oil for the hot bacon vinaigrette. It made for such a refreshing, summery meal.
Vanilla Coconut Jam Cake (made by Annika): I made this vanilla coconut jam cake for our Gal Meets Glam spring/summer birthdays back in June. I found the recipe in one of my favorite cookbooks, the Sweet Laurel Cookbook, which is filled with grain-free, dairy-free, and refined sugar-free baking recipes. The cake was incredibly moist and flavorful, with the coconut and raspberry flavors shining through! I will definitely be making this one again.
Easy Caprese Salad (made by Margaret): Made with just mozzarella, farmer’s market tomatoes, basil, salt, olive oil, and balsamic, this is the easiest and tastiest complement to any main course. The fresher the ingredients, the better!
