What We Baked This Month: Citrus

We decided to start off baking in the new year with our favorite citrus flavors, lemon, lime and, of course, clementine. We used the juice and zest of fresh fruit to create the most delicious and easy to make Lime Pie Bars, Clementine Olive Oil Cake, and Lemon Poppyseed Donuts (replacing the butter with vegan butter and the flour with gluten-free all-purpose flour). We have these lemon and lime juicers that we use almost daily, as well as this multi-tasking zester and this microplane grater that are both super quick and easy to use to add an extra burst of flavor. We’ve included a selection of citrus-inspired finds below to add to your kitchen this winter season.

I made this Olive Oil Cake by Sweet Laurel for Clementine’s birthday back in August last year. I initially had added Sweet Laurel’s coconut whipped cream for her birthday cake, but this time we stuck with the original recipe, kept it one layer and added the powdered sugar on top. This cake is so fluffy and full of flavor. We were nibbling on it all week!

Citrus Juicer

This lemon citrus juicer is one of the most used items in our kitchen, whether we’re adding citrus flavor to drinks or dishes, or baking with it. We also use a citrus juicer with a built-in measuring cup for larger quantities and cocktails.


Microplane

Citrus zest goes a long way in baking and we love this handy microplane for zesting all sorts of citrus, as well as parmesan cheese.


Rattan Basket

This pretty rattan basket is the perfect place to store your winter citrus, as well as to display your baked treats!

Before last year, I had never made donuts, but now that I know how simple they are, they’ve become a favorite thing to bake in our household. Last year we made apple cider and pumpkin ones, so we switched it up this month and made these delicious lemon poppyseed donuts by Sally’s Baking Addiction. I love the taste of a baked donut and these are anything but dry and completely addicting!

Lastly, we wanted to do something different with limes, so we made these key lime pie bars by Minimalist Baker. The crust has lots of granola and crunch, which goes perfectly with the tart but sweet flavor of the key lime filling.
